The sauce originated in the Sicily region where they produce more tomatoes than any other Italian region. Sicily is further known for its sun-dried tomatoes. This pasta sauce is made from a delicious ‘soffritto’ made from extra virgin olive oil and herbs. A soffrito is a mixture of small chopped vegetables gently cooked in oil. These gently cooked vegetables are the base of the sauce and give it an intense and full flavour.<\/p>\n
